Grilled Ontario Lamb Burger
2 1/2 lbs ground Ontario lamb
6 burger buns
1/2 Spanish onion, thinly sliced into rings
crumbled Ontario feta
3 egg yolks
1 tbspDijon mustard
3 tsp white wine vinegar
2 tsp cumin seeds, finely ground
375 ml (1½ cups) canola oil
For cumin mayo, process yolks, mustard, vinegar and cumin seeds in a food processor until smooth.
With motor running, slowly add canola oil in a thin stream until emulsified and thick. Season to taste with sea salt and lemon juice.
Preheat a grill over high heat.
Season ground lamb with salt and shape into 6 patties, then grill, turning once until golden and cooked (3 minutes each side for medium).
Toast buns until slightly charred. Serve patties on toasted buns with onion, feta and cumin mayo.
